Just in case you’re looking for a super simple recipe to whip up this weekend, this simple sloppy joe sweet potato recipe was a winner at my household this week! You can use any kind of ground meat you like on top (I use 85%-90% lean organic ground beef). I also like how the HEB organics sloppy joe sauce packet tastes for the seasoning but you can use whichever one you find that looks good! You can add more brown sugar or ketchup for additional flavor, too. I love to top the sweet potatoes with Horizon’s Mexican shredded cheese but you can get super creative with your toppings. Avocado, green onion, cilantro, any type of cheese you like, sour cream… the sky is the limit!
